Thermal mapping of ham ovens: eight wireless probes and cooking control

How the thermal behavior of a ham oven is tested and how eight wireless needle probes help to read the core temperature.

The industrial problem: different products in the same cycle

When cooking hams, mass, geometry, position on the trolley and air circulation can determine different thermal responses. Two products in the same oven do not necessarily reach the same core temperature at the same time. For the process manager the problem is not just visualizing a set point, but understanding how the heat is distributed and how the products react during the recipe. A well-designed measurement campaign helps compare conditions and identify locations that are slowest to warm.

First distinction: oven air and heart of the ham

A mapping of the oven environment requires sensors placed at points representative of the useful volume to measure the air temperature or other environmental parameters. The needle probes inserted into the ham, however, measure the internal temperature of the product. Eight heart temperature curves allow you to compare eight products or positions, but do not in themselves constitute a complete map of the uniformity of the air in the oven. For a robust evaluation, the protocol can combine the two types of measurement.

Operational example: a trolley and eight needle probes

A trolley is prepared with hams in the defined production conditions. Eight significant positions are chosen, for example distributing the probes between high and low levels, areas near and far from the air flow and products with representative characteristics. The tip of each needle probe is placed in the internal position foreseen by the procedure, avoiding random positioning. The operator records the association between identifier S1–S8 and physical position. The probes are wireless: there are no wires running through the oven door. However, compatibility with temperature, washing, food and specific recipe must be checked before use.

Loading, starting and acquiring

After positioning and identifying the probes, the operator introduces the trolley, closes the oven and starts the recipe. Eight time/temperature traces are observed on the acquisition system, one for each probe. The curves can start from slightly different initial temperatures and rise at different speeds. Monitoring allows you to recognize any heating delays and compare subsequent cycles. Demonstration graphs should not be confused with real test data; each operational report must report measurements traceable to the cycle performed.

What to look for in the eight curves

The analysis considers rising times, differences between products, reaching the thresholds set by the recipe, any stops and anomalous variations. It is not enough to verify that all curves end at similar values: thermal history can also be relevant. The safety and heat treatment requirements must be those validated for the specific product and process; there is no single final temperature to be applied without distinction to all hams.

Vacuum and load mapping of the oven

An empty test, with trolleys and shelves without product if required by the protocol, helps to identify the thermal distribution of the system. The load test allows us to observe the effects of quantity and arrangement of the hams. The core temperature adds a level of information about the product, but remains distinct from the air mapping. To compare the tests you need documented recipes, positions, initial conditions and acquisition methods.

The contribution of Novabase technologies

NovaSensor identifies the Novabase family dedicated to wireless probes and the collection of field measurements. Integration with a monitoring system can make it easier to associate each channel with a point in the oven, view the trend and store process data according to the agreed architecture. Before describing a function as available on each installation, the probe model, recording characteristics, radio coverage and export modes should be verified.

From graph to process improvement

A useful report doesn't just show eight colored lines: it contains location plans, load conditions, recipe, instrument identification, events and comments on differences. It can provide elements to review the positioning of the cart, compare recipes and plan further checks. The choice of any corrective actions is up to the joint evaluation of production, quality and food safety managers.

Frequently asked questions

Why use eight probes? This is an example of a multi-channel configuration, not a required number. Do wireless probes also measure air temperature? It depends on the type and placement: a needle probe in the product measures the heart. Is monitoring equivalent to microbiological validation? No: it provides data to be integrated into the process validation path.
